ASIAN CHICKEN LETTUCE WRAPS
These bread-free wraps are a God send. Totally yum and bursting with as much flavour as your favourite takeaway, they’ll have all your workmates drooling with food envy. Marinate the ground chicken in the hoisin, teriyaki, soy sauce, chopper ginger and minced garlic for a few hours, then cook in a pan heated with sesame oil and toss in the mushrooms and basil. Once cooked through and cooled, store in a Tupperware and pack a few slices of the gem lettuce to take to work with you.

Ingredients:
1 gem lettuce
2 cups ground chicken
1 cup shiitake mushrooms (chopped)
6 basil leaves (chopped)
2 tsp sesame oil
1 tsp hoisin sauce
1 tsp teriyaki sauce
1 tsp soy sauce
1 tsp chopped ginger
2 tsp minced garlic
NORI SANDWICHES
Nori seaweed makes a fun alternative for bread and it goes incredibly well with fish. So if you love tuna or salmon, this one’s for you. All you need to do is spread the cooked rice (mixed with sushi seasoning) over the Nori seaweed sheets using damp fingers and then add your sandwich ingredients before adding more rice and another layer of seaweed; cut into triangles for the perfect sarnie sized bites or roll up for a wrap.

Ingredients:
Nori seaweed sheets
Smoked salmon slices
1 cup sushi rice
¼ cup sushi seasoning
Carrot (thinly sliced)
Cucumber (thinly sliced)
HEALTHY GUACAMOLE DIP
Avocado is a great source of nutrients and it contains a healthy fat that keeps you fuller for longer; which is why it makes the perfect dip for your lunchtime veggies. Blitz an avocado, fresh lime juice, onion and garlic clove in a food processor and then stir in the diced tomatoes for the perfect guacamole.

Ingredients:
1 avocado
Fresh lime juice
½ onion (diced)
1 tomato (diced)
1 garlic clove
Chopped veggies for dipping
